October is National Cookie Month

In honor of National Cookie Month, here are my daughters’ favorite ginger cookies. Makes me think Christmas is coming soon! You wouldn’t know it by the weather, still toasty outside. These are very ginger-y. Grab a tall glass of milk and enjoy.

Ginger Cookies

Ginger Cookies
3/4 cup shortening
1 cup sugar
1 egg
1/4 cup molasses
2 cups flour
2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 teaspoon ginger

Preheat oven to 350 degrees. Cream together the shortening and sugar in a mixer at medium speed. Add egg and molasses and mix until well blended. In a separate bowl, combine all dry ingredients. Slowly mix the dry ingredients into the wet until well combined.

Use a cookie scoop to make even shaped balls on a cookie sheet. Bake for 12 minutes in a conventional oven or 8 minutes in a convection oven.
