Teriyaki Glazed Salmon

Easy to make, so tasty and so good for you.

I made this recipe last week for a client having 22 people for dinner. They all went gaga for it and its so simple to do. It’s a perfect meal for a summer night because you only stick it under the broiler for 4 – 8 minutes depending upon how thick your fillets are.

Ingredients
1/2 cup soy sauce
1/2 cup sweet sherry
1/4 cup sugar
4 (8-oz) salmon fillets (or one large one)

Directions
1. In a medium stainless-steel saucepan, bring the soy sauce, sherry and sugar to a boil, stirring often. Reduce the heat and simmer, stirring occasionally, until thickened and reduced to about 2/3 cup, about 10 minutes.
2. Heat the broiler. Line the broiler pan with foil and spray with non-stick spray. Place salmon on pan.
3. Remove some of the glaze to serve on the table with the salmon in case someone wants some extra (It’s that yummy.) Brush the remaining glaze generously over the salmon. Broil for 4 – 8 minutes, depending on the thickness of your fillet and your desired doneness. Flake with a fork to check.
