Happy National Empanada Day

What will you fill it with?

When my hubby and I were in Cancun recently, we went on day-long excursion to the Myan temple of Coba. As part of the day, villagers made us a fantastic lunch. One dish was a chicken empanada. I ate far too many of them, but they were so delicious. I’ve never made any myself, but think I need to soon because they’re little pockets of yuminess. If you’re in search of the perfect empanada, I’ve found the website for you. It details its origins, the different recipes and has links to recipes. – Chef Ro
