Happy National Empanada Day

When my hubby and I were in Cancun recently, we went on day-long excursion to the Myan temple of Coba. As part of the day, villagers made us a fantastic lunch. One dish was a chicken empanada. I ate far too many of them, but they were so delicious. I’ve never made any myself, but think I need to soon because they’re little pockets of yuminess.
