Transform Your Summer Tomatoes

Everyone (except me because I seem incapable of growing tomatoes) has beautiful tomatoes in their gardens. I made this salad last week with lovely heirloom tomatoes so the  colors were stunning. It is simple, tasty and a perfect side dish for a hot summer night.

Ingredients
3 tablespoons extra virgin olive oil
1 1/2 tablespoons white wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 clove garlic, minced
2 tablespoons fresh basil, chopped
4 medium heirloom tomatoes, cored & cut into 1/2-inch wedges
1/2 cup small fresh basil leaves
1 1/2 ounces goat cheese crumbled

Directions
1. Combine first 5 ingredients in a large bowl, stirring with a whisk. Add chopped basil and tomato wedges, stir to combine. Cover and let stand for 1 hour. Top with small basil leaves and goat cheese.
